As July comes to a close, it feels like summer is coming to a close. But there is still plenty of time to cook out with family and friends! Nothing says summer BBQ like a pasta salad. Lucky for you this one is both easy and delicious.
You will need:
- 1 box pasta (choose a fun shape like elbow or rigatoni)
- 2 containers tomato grapes
- 1 cup shredded carrots
- 1 head brocolli
- 1 block cheddar cheese
- 2 cups light mayonnaise
- 1/2 cup light ranch
- 4 tablespoons apple cider vinegar
- 1 tablespoon EVOO
- Salt and pepper
- Dried basil
Cook pasta until al dente (slightly firm). Drain and rinse in cold water. Toss with EVOO to prevent from clumping. Refrigerate while you prepare the rest.
Rinse grape tomatoes, cut in half length wise. Put into a large bowl. Add in 1 cup of shredded carrots. Dice up cheddar cheese block into approximately 1/2 in cubes. Add to bowl.
In separate bowl, mix in mayonnaise, ranch, and apple cider vinegar, Add basil. Salt and pepper to taste. Add more of either mayonnaise/ranch/vinegar depending on how tangy you like your dressing.
Add chilled pasta to large bowl. Scoop out dressing onto pasta in large bowl. Stir until ingredients are coated evenly. Rinse and cut up broccoli into bite size pieces. Line bowl with broccoli for a styled touch.
Finally, enjoy! Easy right? Add variety to this salad with ingredients of your choice, such as onions, corn, red or green peppers, or pepper jack cheese.
